Salmon – Mexican Fajitas
Fast, easy and healthy – these salmon fajitas are a great way to include more fish in your diet. A great dish to place in the middle of the table for everyone to make their own tortilla. Serve with warm tortillas, salsa, guacamole, sour cream and extra lime wedges.

Instructions
  1. You will need 2 bowls – place the salmon in one and add the onion, garlic, and peppers to the other. Mix together the rapeseed oil, red chilli, oregano, lime zest and juice, and season well. Pour half over the salmon and the remainder over the vegetables, stirring until well mixed. Pour half of the mixture over the vegetables, season with salt and pepper and mix well.
  2. Heat a large non stick frying pan over a medium – high heat, add the vegetable mixture and cook for 4-5 minutes.
  3. Reduce the heat slighlty, add the salmon to the pan and mix gently to combine with the vegetables. Continue cooking for 4-5 minutes until the salmon is cooked. Scatter over the coriander and serve alongside the warm tortillas, salsa, guacamole, sour cream and lime wedges.
