Life today is busy and it can be difficult to find time to cook and eat well. Being short of time doesn’t mean you can’t enjoy home cooked food and Scottish salmon is now seen as the ultimate healthy fast food.

A typical 120-140g salmon fillet will pan fry in approximately 8 minutes and it has great health credentials. Scottish salmon is a rich source Omega 3 fatty acids, not to mention protein and vitamins. That’s got to be good news for anyone looking to improve health and diet. And, as more people seem to spend less time cooking but still want a quick meal on the table, Scottish salmon fits the bill perfectly. For anyone that’s time poor but wants healthy home cooked food, it’s a win win. Over 1 million salmon meals are eaten in the U.K everyday and according to Kantar Worldpanel, when it comes to shopping for fish, 1 in 4 trips include salmon.
These Mexican tortilla’s filled with salmon and peppers are quick & easy to make and, if time is against you, a few cheat ingredients will help.
With Salmon as the star ingredient, a healthy meal can be on the table in no more than 20 minutes. And, to make the dish a real speedy and tasty dinner, use shop bought extras like guacamole, salsa and sour cream to serve with the salmon. If time is on your side, you can of course make your own. For a more substantial meal, add sides such a rice or potato wedges. Any leftovers will make a delicious packed lunch the following day.

Fast, easy and healthy - these salmon fajitas are a great way to include more fish in your diet. A great dish to place in the middle of the table for everyone to make their own tortilla. Serve with warm tortillas, salsa, guacamole, sour cream and extra lime wedges.

- 4 120 - 140g boneless skinless salmon fillet cut into cubes
- 1 large red onion sliced thickly
- 2 garlic cloves - crushed or chopped
- 2 large peppers - Red and Yellow sliced
- 4 tbsp rapeseed oil
- 1 large red chilli or 1/2 tsp chilli flakes
- 1 tsp dried oregano
- 3 limes - grate and juice 2 and keep the remaining lime for serving.
- 2-3 tbsp freshly chopped coriander
- Salt and freshly ground black pepper
- 1 packet tortillas
- Salsa, guacamole, and sour cream to serve.
- You will need 2 bowls - place the salmon in one and add the onion, garlic, and peppers to the other. Mix together the rapeseed oil, red chilli, oregano, lime zest and juice, and season well. Pour half over the salmon and the remainder over the vegetables, stirring until well mixed. Pour half of the mixture over the vegetables, season with salt and pepper and mix well.
- Heat a large non stick frying pan over a medium - high heat, add the vegetable mixture and cook for 4-5 minutes.
- Reduce the heat slighlty, add the salmon to the pan and mix gently to combine with the vegetables. Continue cooking for 4-5 minutes until the salmon is cooked. Scatter over the coriander and serve alongside the warm tortillas, salsa, guacamole, sour cream and lime wedges.
