Salmon - Mexican Fajitas

Fast, easy and healthy - these salmon fajitas are a great way to include more fish in your diet. A great dish to place in the middle of the table for everyone to make their own tortilla. Serve with warm tortillas, salsa, guacamole, sour cream and extra lime wedges.

Ingredients
  • 4 120 - 140g boneless skinless salmon fillet cut into cubes
  • 1 large red onion sliced thickly
  • 2 garlic cloves - crushed or chopped
  • 2 large peppers - Red and Yellow sliced
  • 4 tbsp rapeseed oil
  • 1 large red chilli or 1/2 tsp chilli flakes
  • 1 tsp dried oregano
  • 3 limes - grate and juice 2 and keep the remaining lime for serving.
  • 2-3 tbsp freshly chopped coriander
  • Salt and freshly ground black pepper
  • 1 packet tortillas
  • Salsa, guacamole, and sour cream to serve.

Instructions
  1. You will need 2 bowls - place the salmon in one and add the onion, garlic, and peppers to the other. Mix together the rapeseed oil, red chilli, oregano, lime zest and juice, and season well. Pour half over the salmon and the remainder over the vegetables, stirring until well mixed. Pour half of the mixture over the vegetables, season with salt and pepper and mix well.
  2. Heat a large non stick frying pan over a medium - high heat, add the vegetable mixture and cook for 4-5 minutes.
  3. Reduce the heat slighlty, add the salmon to the pan and mix gently to combine with the vegetables. Continue cooking for 4-5 minutes until the salmon is cooked. Scatter over the coriander and serve alongside the warm tortillas, salsa, guacamole, sour cream and lime wedges.
